Khaja maker Mukesh Yadav told Local 18 that to make Khaja, first Satha is prepared. Satha is actually made by adding water and flour to make a mixture. Khaja becomes very crispy due to Satha. After this, a dough ball is made and rolled out. Then Satha is applied on it and it is wrapped in a round shape.
Usually, Khaja has between 30 and 40 layers. But the Khaja available in Silav, Bihar has 52 layers and Silav’s Khaja is also considered famous all over Bihar. Mukesh Yadav told that after this it is cut into small pieces, then it is rolled and the Khaja is fried.
Later, coating of sweetness is done
Mukesh Yadav said that after this sugar syrup is prepared and it is poured on the Khaja one by one. He said that Khaja is kept decorated one above the other and gradually the coating of syrup is spread on it. A lot of hard work is required to make Khaja. It is worth noting that Khaja is very famous in Bihar.
